Tasting notes :
Deep, golden straw-coloured robe. Very fine bubbles. Opens with well-developed, ample and powerful aromas of fresh yellow fruits, supported by hints of vanilla and hazelnuts. A connoisseurs’ champagne, this vintage will be greatly appreciated as an aperitif or with a starter. Its finesse makes it the perfect accompaniment to fish and shellfish.
Wine Making and Ageing
The very early harvest and fresh qualities of the year 2007 make this vintage exceptional.
Grapes harvested by hand at the moment of perfect maturity.
Aged entirely in Foudres de Chêne (large-capacity barrels) for 8 months.
Exclusive use of the cuvee (the first juice off the press).
Natural malolactic fermentation in barrels.
Maturation : A very long maturation, more than three times longer than
required by the Appellation (36 months), for an infinite array of flavours.
Remuage : hand shaking on wooden racks.
Dosage (Brut) : 8 grams per liter.
